In order for the fat to be digested, the fat globules must be emulsified first by bile salts in the stomach. By emulsifying we mean the breaking of globules of fat into much smaller emulsion droplets. The liver produces the bile salts which breakdowns fats into small droplets. The fat then is digested by lipase.
